Palermo — The Theatre of Street Food
Palermo didn't invent street food, but it perfected it through centuries of domination and cultural exchange.

Panelle & Crocchè
Chickpea-flour fritters and potato croquettes, served in bread with a squeeze of lemon.
A legacy of Arab rule (9th–11th c.), which introduced chickpea flour to Sicily.

Sfincione
Palermo's pizza, soft and perfectly oily, topped with tomato, onion, caciocavallo cheese and anchovies.
Born in Palermo's monasteries in the 17th century as festive bread for Christmas Eve.

Pane con la Milza
Veal spleen and lung fried in lard, served "schietto" (just lemon) or "maritato" (with ricotta and caciocavallo).
A dish of Jewish origin: kosher butchers gave away offal, which Palermitans turned into a delicacy.

Stigghiola
Lamb intestines rolled on a skewer and grilled over coals with spring onion.
A Greek pastoral tradition later refined under Arab rule, typical of Palermo's neighbourhood markets.

Catania — Queen of the Arancino

Arancino
In Catania it's masculine and comes as ragù, butter or alla Norma. At Savia on Via Etnea, they've been frying them since 1897.
Invented under Arab rule (10th c.), rice was shaped into balls for travel. The name recalls the shape of a small orange.

Cartocciate & Cipollina
Savoury brioches filled with ham and mozzarella or stewed onion. The quintessential Catanian snack.
Born in Catania's rosticcerie in the 1950s, blending the French brioche tradition with Sicilian fillings.

Granita with Brioche
It's not a dessert — it's breakfast. Almond, pistachio or black mulberry granita served in a brioche with a topknot.
Descends from Arabic sharbat, evolved using Etna snow. The brioche col tuppo echoes the topknot hairstyle of Sicilian women.
The Granita Guide
Sicilian granita is not a sorbet. The texture is creamy, almost velvety.
Almond
The most traditional. True almond granita has a bitter aftertaste that sets it apart.
Bronte Pistachio
Deep green, full flavour. Beware of fakes: real pistachio is expensive and naturally coloured.
Black Mulberry
Deep purple, intense flavour. Only available in summer when mulberries ripen.
Coffee
Strong and sweet. In Catania, order it "con panna" (with fresh whipped cream).
Lemon
Fresh and direct. The classic from Acireale and the Ionian coast.

Sicily's Red Soul
Full-bodied, warm wines with notes of ripe cherry and sweet spice. Finest expressions from Noto and Pachino. Perfect with grilled meats and aged cheeses.

Marsala Vergine Soleras is an extraordinary meditation wine. Visit the Florio Cellars in Marsala: the century-old barrels are a complete sensory experience.

Passito di Pantelleria
Mediterranean Sweetness
From sun-dried Zibibbo grapes comes one of the most prized sweet wines. Aromas of apricot, honey and orange blossom. Perfect with almond pastries.

Catania
